Abstract

This research determined the effectiveness of Modified Atmosphere Packaging (MAP) on the postharvest quality and shelf life of green chilies stored under ambient (25±2°C) and cold (8±1°C) conditions. The characteristics of physiological and physical, as well as biochemical, quality were evaluated after 12 days of storage. MAP treated chilies minimized weight loss (17.20%), preserved firmness (1.89), slowed color change (1.93), minimized disease incidence (0.89) and decay (0.09%) at ambient temperature considerably compared to the control. Under ambient storage, MAP significantly reduced physiological weight loss, delayed firmness loss, and minimized decay development compared to the control. Under cold storage, the beneficial effects of MAP were further enhanced, with MAP2 demonstrating superior retention of moisture (7.23%), color (1.26), vitamin C (121.3 mg 100 g-1), phenolics (150.7), and antioxidant capacity (50.15). The findings indicated that MAP was more effective under cold storage, suggesting that low temperature and modified atmosphere had a synergistic effect. The research revealed that MAP is a viable and cost-efficient postharvest technology that can be used to extend the shelf life and market quality of green chilies.
